Hah! I was seriously trying to figure out what to substitute - like some kind of silken tofu? or chickpea batter, or a spongey veggie like zucchini? Was genuinely curious :-D I've watched tons of youtube videos trying to get tomago in a rectangle pan just right - I think it just takes practice!
