I usually bring bread and cheese or fruit to share but clearly I need to step up my game. You wrote, “It is just as common for tamagoyaki to exclude eggs and to include shoyu.” I am curious what do you substitute for the eggs? Also I went to school in New England and we would get apple cider donuts all. The. Time. Now I want cider donuts!

Hah! I was seriously trying to figure out what to substitute - like some kind of silken tofu? or chickpea batter, or a spongey veggie like zucchini? Was genuinely curious :-D I've watched tons of youtube videos trying to get tomago in a rectangle pan just right - I think it just takes practice!
